Cupcake-y Kinda Day

Thanks to the Mommies at Mommies United, we have had a very cupcake-y kinda day. You see, they're having a Sweet Extravaganza and are giving away a very cool Cupcake Courier. Being from a small, isolated town in Canada, I don't have many ways to get my hot little hands on one of these things...so winning one would be ever so cool. My current way of transporting cupcakes is awkward and only holds a dozen. This one holds 3 dozen!!! Golly gee! And if you know me at all, you'll know that I love baking and in large quantities. I just can't seem to help myself.

Being that this is supposed to be a blog about losing weight, I thought I'd try to lighten up these cupcakes...just to see if I could do less damage to my own waistline. I'm hoping to hit 75 lbs lost on Monday, so must behave myself around those cupcakes even if they are lighter versions.

First, let's try out the fabled diet cola mixed with chocolate cake mix. Take one can of diet cola and one box of cake mix.


Mix.



And lick the utensils.


While those were cooking, we colored some pictures of our lovely celebratory cupcakes from Mommies United.

Then I decided to make carrot cupcakes. Also from a box. My attempt at a little more healthiness this time around comes in the form of replacing the oil for applesauce. WAY less fat and just as moist.


Icings! I found a pretty figure friendly chocolate icing recipe. Just mix 1 cup of chocolate chips with 1 cup of sour cream over low heat until combined. I used 5% fat sour cream which eliminates almost all the sugar and is pretty tasty if you don't mind a faint taste of sour cream. As for the cream cheese icing for the carrot cupcakes? There's no redeeming that one. I used light cream cheese, but with the butter and the icing sugar I'm not even going to pretend that it's light.

Now, if only I had some way to transport these lovely a-little-better-for-you-but-still-not-great-for-you cupcakes out of the house so's I don't eat them all.

Points Values: Chocolate Cola Cupcakes made 18 - 2 pts each. Carrot Cupcakes made 24 - 2 pts each. Chocolate Fudge Icing - 2 pts for 1 tbsp. Cream Cheese Icing - not even going there!

  4. Hi! Poppin' in for some cupcakes...lol! So all you do is add a can a diet cola to the box mix? How do they taste? I am soo going to have to try this out! :o)

    I am struggling with my weight here lately. I just went to the Dr and when I stepped on the scale I about fell off of it. I had no idea that I had gained so much weight! Your blog may just be part of my inspiration. Thanks for sharing your story! :o)

  7. Mmm! I also never add oil to those cake mixes. I use 1 cup of plain yogurt instead, along with a cup of water and the 3 eggs. Much healthier.
