Zucchini

I have a half a million blog posts in my head to write. Some happy, some reflective, some confessional and some plain boring.

And what am I going to post about tonight? On a Friday night...of a long weekend nonetheless? When many much cooler people are out doing something fun and interesting?

Zucchini.

Yup.

I have 10 cups of slightly freezer burnt and soon to be badly freezer burnt zucchini in my freezer that I am determined to use up, in baking, to fool my children into eating something slightly nutritional. Does anyone have a good recipe for freezer burnt zucchini? Or regular zucchini?

Anyone?

I went grocery shopping this morning...took me 2 hours and 10 minutes round trip thanks to my husband who graciously watched the kids as he languished on the couch with a fever and aches and pains and all that goes along with his mystery disease that has him home sick from work. I spent $325. Gosh food is getting expensive. Then I fed my kids lunch and baked all afternoon while ignoring said kids. I baked cookies and muffins. The muffins have carrots in them - nutritional. The cookies have chocolate chips in them - not so nutritional. And one type of cookies that I baked has chocolate chips and chick peas - nutritional mixed with not so nutritional and a little bit weird. The jury's still out on those ones although Natey got a punishment for stealing one when he was told no...so maybe a possible success? Something to eat when Will's at school? I hope. At 7 pm I finally finished the supper dishes and those stinkin' muffin tins. Felt like I was in the kitchen and dealing with food ALL DAY. And I guess I was.

And now I'm on my blog looking for zucchini recipes.

Yup...definitely a cool chick sitting here.

On the bright side, this fever that my husband has been running for 2 days (please God, don't let the rest of us get it) seems to be affecting him in a good way. He actually ate spaghetti squash tonight and liked it. It's a small miracle.

  1. Mmmm I love zucchini, but I don't have any good ideas. We use it along with grape tomatoes, mushrooms, bell peppers, and purple onions and grill them on the BBQ in our grill basket. But of course, that's not something the kids would eat. Chocolate zucchini cake? Deep fried zucchini sticks? Those are the only other things I can think of! Good luck! And let us know what you come up with...

  2. All the zucchini is grated...so baking it must be. I'd rather fry or grill it up and eat it plain personally.

  3. kirstyn loves those cookies with the chick peas! she thinks it is funny to "hide beans" from daddy in the cookies!

  4. There are some good recipes for zucchini loaves. I had WAY too much zucchini last year that I too was desperate for new ideas. I googled and found a recipe for jam that uses the vegetable but tastes like strawberry. Strange, yes I know, but I did try and make it. We haven't tasted it yet, but hopefully it's alright. My advice would be to not make it if you grated the zucchini with the peel 9as I did!)
