½ c whole-wheat flour
¾ c all-purpose flour
½ c brown sugar
1 tbsp baking powder
½ tsp baking soda
¼ tsp salt
1 tsp cinnamon
2 c All-Bran
¼ c 100% cranberry juice
1 egg replacer, prepared
1/3 c unsweetened applesauce
1/3 c fresh or frozen blueberries
1/4 cup fresh or frozen cranberries
Preheat oven to 400F. Stir together flours, sugar, baking powder, baking soda, salt and cinnamon. Set aside.In large mixing bowl, combine cereal and cranberry juice. Let stand 5 minutes. Add egg replacer and applesauce, beat well. Add flour mixture and stir until just combined. Add berries and fold in. Bake 20 minutes. Yield 12 muffins.
